Preheat the oven to 175°C (345°F) and line a baking tray with baking paper.

Combine the almond meal, stevia, salt, spices and soda water in a large bowl and stir well. Warm the almond butter in a bowl resting on a saucepan of boiling water on the stovetop, ensuring the bowl does not touch the water. Add the eggs and vanilla, and whisk until the mixture is smooth. Add to the almond meal mixture and mix well.

Roll the mixture to 5 mm (¼ inch) thickness and use a gingerbread man cutter to cut out shapes. Place on the prepared baking tray, leaving space between them to allow for spreading. Decorate with currants or draw on a design with a toothpick.

Bake for 15–20 minutes or until crisp and golden. Cool a little on the tray before transferring to a wire rack to cool completely.

To make the frosting, whizz all the ingredients in a blender until combined. Pour into a bowl and refrigerate for 15 minutes, then blend again. Use to decorate the biscuits, then refrigerate to harden further if required.

SUPERCHARGED TIP Almond meal and almond flour are the same thing and can be used interchangeably. Blend the frosting with raspberries or blueberries to create a colourful icing the kids will love.
